Observation: Rodent dropping noted in several areas including under/behind equipment and on some shelving units in kitchen and dry storage.
Corrective Action(s): - clean and sanitize all areas.
-Increase the frequency of cleaning and sanitizing.

Observation: -Some point of entry is noted in facility behind ice machine, under shelving.
-.Clutter noted in some areas (kitchen shelving, cabinets in beverage area,dry storage room)

Corrective Action(s): -Seal all point of entry.
-Declutter, discards any items that are not used on daily operation, organize to aid cleaning and monitoring for pest activity

Observation: Noted hydrogen peroxide sanitizer in spray bottle labelled as quats sanitizer
Corrective Action(s): -Ensure spray bottle of chemical are labelled correctly.

Observation: Some cabinets in bar/servery area are in bad conditions (broken).
Corrective Action(s): Repair or replace.

Comments

- Conducted a routine inspection with student. Facility has rodent issues ( started from end of Feb), Abell pest control is serving the facility (once a month) and Environmental manager is monitoring the facility as well.

-Temp of coolers and freezers are satisfactory ( <4 oC , and <-18 oC)
-Temp of hot holding units > 60 oc
-Low dishwasher chlorine concentration is 50 ppm
-Foods are properly covered in coolers and freezers
-Foods are labelled with used by date:** some were noted exceeding used by dates in coolers-discarded at time of visit.
-Staff are following good personal hygiene (wearing hair net, clean aprons) at time of visit.


Discussed:

*Cooling procedure: ensure all hot foods are being cooled properly ( from 60 to 20 oC in 2 hrs and from 20 oC to 4 oC in 4 hrs) -temp monitoring to be done to ensure proper cooling
*Ensure to discards any cooked foods/or ready to eat (non acidic) after max 2 days in cooler
*Cleaning and sanitizing of all surfaces at the end of night and sanitizing all surfaces before food prep again in the morining (due to active rodent infestation.
* Store all clean utensils , dishware in sealed bins (due to active rodent infestation)
* Ensure to train staff re: food Safety and sanitation - lack of FoodSafety knowledge noted by some staff ( not able to explain proper temp of cooking, cooling procedure, or monitoring for dishwasher)
Please submit a written action plan to address all noted violations and * items by email no later then April 19-2023.

Follow up inspection will be conducted.
