Follow up inspection for food complaint: Raw chicken burger.
- Went to the store, talked to shift Supervisor regarding complaint. Supervisor showed Steps of cooking the chicken patties (deep fried)
Cooked from frozen, according to corporate plan, deep fry for 3.15 minutes. (preset button on machine). Probed inside the patty, it was at 74 degrees Celsius (165 degrees Fahrenheit) after cooking.
- Supervisor advised that they probe inside the patty every morning and afternoon to check if reaching to temperature internally. (probe thermometer available on site)
- Advised to check temperature more often to ensure that the meat is cooking properly.
- Advised that when putting chicken patties to deep fryer, do not stack them together, make sure they are lying down flat, so that all sides are being cooked evenly/properly. (use the tray which seperate each patty instead of the fry basket which may result in patties being stacked on top of each other.)
Supervisor will relay messages to all staffs.
- All refrigerator units functional, all hot holding units at adequate temp.
