- All hand washing stations supplied with liquid hand soap and single use paper towels; hot/cold running water.
- High temperature dishwasher at 73.2 C at plate level after final rinse cycle.
- Coolers (grass doors/front and back/, under-counter, 2-prep. coolers, front bar coolers) at 4 deg C or lower.
- All freezers (kitchen and back) at -18 deg C or lower.
- Thermometers for cold units - available.
- Hot holding units (rice, miso soup and other) at 60 C or higher.
- Sushi rice - satisfactory.
- Storage - organized (food stored off the floor and in containers with lids).
