Observation (CORRECTED DURING INSPECTION): Milk cakes (milk-based) observed to be stored in the display cooler measured at 23.7C air ambient temperature. Operator informed that they have been stored under room temperature for 2 days. Carton of cream observed to be stored out at room temperature in the kitchen.
Corrective Action(s): Discard the aforementioned items. All potentially hazardous foods must be stored at 4C or lower.

Observation (CORRECTED DURING INSPECTION): Front handwashing sink obstructed with boxes and shelving units.
Corrective Action(s): Ensure all handwashing sinks are not obstructed, well equipped with hot and cold running water, liquid soap, and paper towels to ensure hand hygiene are upkept by staff.

Observation: Several food items observed to be uncovered in the prep cooler, walk-in cooler, and walk-in freezer. Observed metal container of indian sweets in direct contact with indian sweets. Observed diced cooked chicken in a container in direct with diced cooked chicken. Single-use containers, and scoops observed to be in direct contact with dry goods in the dry food bins.
Corrective Action(s): Ensure all food are covered and food-grade containers are not in direct contact with food to prevent possible cross-contamination. Do not use single-use scoops. Ensure all scoops with handles are stored outside of dry goods bins. Corrected by: Immedately.

Observation: Observed built-up of food debris underneath and around the following areas:
-Dry storage racks.
-storage racks in the walk-in cooler.

Observed grease build-up and dust accumulation on the exhaust hood vent. Next service date by external company is July 7, 2022.
Corrective Action(s): Clean and sanitize the aformentioned items. Review and follow facility's Sanitation Plan. Aforementioned items should be cleaned and sanitized daily to prevent food and/or grease build-up. Corrected by: May 25, 2022.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottles measured at 100ppm. 3-compartment sink available. High-temperature dishwasher measured at 78.9C final rinse temperature. Chlorine test strips available.
Prep cooler, display cooler used to cold-hold potentially hazardous foods, walk-in cooler measured at 4C or lower. Walk-in freezer measured at -18C.

NOTE: Ensure to prepare chlorine sanitizer bucket for the kitchen to measure at 100-200ppm for sanitization of food contact surfaces at all time, not spray bottles as re-usable wiping cloths are used. Declutter walk-in freezer.
