Make sure staff have sani-buckets in place in bakery as discussed. Bleach dosing system would work here too. Dishwasher at 72 C at plate. handwash station good and stocked. General sanitation is good. No signs of rodent activity. Little sign of bug activity and likely residual from summer months. Storage area is good. Cooling units less than 4 C.
