Hand sinks provided with liquid soap and paper towels. Walk-in cooler was organized and all food items were covered. No food boxes or containers stored directly on the floor. Chlorine sanitizer available at 100 ppm. Ecolab has recently installed a sanitizer dispenser (quats). Sanitizer will be switched to quats once staff has been trained to use the dispenser. Dishwashing area was clean. All food preparation must be done before opening and non-busy period. Post schedule of preparation in the back area. Food preparation - slicing vegetables, soaking noodles and rinsing pre-cooked shrimps.
