Operator on site has a valid Food Safe certificate. Keep copy on site.
Copies of Food Safety Plan and Sanitation Plan/Cleaning Schedule are to be kept on site.
Reviewed procedures for soup - good.
Reviewed procedures for chicken - good (cooking temperature is 74 C).
Reviewed procedures for cleaning - make sure that cutting boards and utensils used throughout the day and washed, rinsed, sanitized and air dried every 4 hours. Add this to your schedule.
Today, large cooler, milk cooler, and prep/line cooler are at 4 C or colder. Keep records of daily checks. See above regarding display cooler.
No hot holding today (no longer serving steamed buns).
Liquid soap and paper towels are at the double sink and at the hand sink.
Chlorine bleach (200ppm) is available in bucket used to sanitize wiping cloths.
Dishwasher has a final sanitizing rinse (82 C at gauge and 71 C measured inside of the machine - good).
Cleaning - hand sink does not have any water leaks. Clean cupboards etc. on a routine basis. - ok.
