Temperature Controls:
All fridges must maintain foods at or below 4 deg C:
-Entree fridge 3 deg C (meats)
-Grill 1-door fridge (eggs) -raw eggs stored on bottom
-Salad bar 4-door fridge 2 deg C (vegetables)
-Walk-in cooler 4 deg C (meats) -raw marinating meats stored separately from other foods
-Cafe 4-door upright 2 deg C (milks)
-Preparation cooler 4 deg C (meats)

Hot held foods must maintain foods at or above 60 deg C:
-Chowder soup 75 deg C
-Casseroles 68 deg C

High temperature hot water sanitizer must be >82 deg C as per thermostat:
-Main Washer checked and verified (plate level 78 deg C)
-Pot Washer checked and verified (thermolabel good)

Chemical Controls:
QUAT-type sanitizer buckets must be maintained >200ppm as per test strips:
-dispenser and buckets checked and verified

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridge(s), hot holder(s) and mechanical washer(s)

General Sanitation
