Observation (CORRECTED DURING INSPECTION): Cooked rice that was around 40-45 degrees Celsius was found in a covered plastic bin on the kitchen counter.
Corrective Action(s): Cooked foods including cooked rice shall be cooled as quickly as possible by dividing into smaller portions, and using shallow metal pans - foods must cool down to room temperature within 2 hours using one or more of these methods. Instructed operator to put the rice into a shallow metal pan and allow to cool more quickly.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer for wiping cloth in the kitchen was found to have a chlorine concentration that was less than 10ppm.
Corrective Action(s): Bleach sanitizer shall have a chlorine concentration of at least 200ppm. Instructed operator to change the sanitizer solution at time of inspection. Also informed operator to change all sanitizer solutions after every busy period (e.g. lunch, dinner, etc.).

Observation (CORRECTED DURING INSPECTION): Mouse droppings foundi in undercounter cabinet in the front servery.
Corrective Action(s): Clean up mouse droppings and sanitize the affected area. Droppings were not found anywhere else and premise is serviced regularly by a licensed pest control company. Instructed operator to clean the droppings at the time of inspection.
