Observation: No sanitizer being use in kitchen, wiping rags noted on counters
Corrective Action(s): -Surface sanitizer must be provided in the prep area and all wiping rags to be rinsed and store in a bucket of sanitizer at each food perp area
-Spray bottle must be labeled and used with paper towel ONLY

Observation: -Dishwasher is broken
Corrective Action(s): Repair the dishwasher to provide temp of at least 71 oC at plate

Observation: Back area- no hand washing sink, chef mentioned that one of the two compartment sink is being used, but both sink were occupied with basket and utensils ??/
Corrective Action(s): Provide a designated hand washing sink in the back with paper towel and liquid soap in wall mounted dispenser. Sink must be used ONLY for hand washing
Or install a separate hand washing sink for the back prep area
Violation ticket will be on hold.

Observation: Noted 1. Foods without cover in all cooler 2. raw meat stored above and near cooked or ready to eat products and vegetable.
3. Foods (bucket and boxes )are stored directly on the floor in walk in cooler and in kitchen floor 4. Foods were stacked above each other without cover 4. Noted opened can of foods
Corrective Action(s): 1- cover all foods 2. store raw meat on lower shelf and away from vegetable and cooked foods (cooler and freezer) 3. Store all products on shelving unit at least 6 inches off of the floor 4. Do not stack food containers without protection 4. After opening a can transfer the food into a food grade container
