Coolers are at 4 C or colder. Temperature records are being kept- good.
Hand washing stations (3) have liquid soap and paper towels in dispensers. Sinks are all accessible - good.
Hot holding food temperatures are all above 60 C (mashed potatoes, food in steam hot holding cabinet). Cooking temperatures are at 74 C or hotter.
Cooling food safety plan is available on site.
Quats - wiping cloths are stored in a quats solution that is dispensed at 200ppm. Solution is changed frequently throughout the day.
Surfaces - most of the drywall surfaces that were becoming worn have been resurfaced. Wall corners have been resurfaced and reinforced with stainless steel corners - good.
Continue with re-surfacing drywall surfaces as discussed.
Cleaning - good. Add cleaning of removable exhaust filters above the cooking equipment to your cleaning schedule.
Commercial dishwasher has a sanitizing rinse (82C/180F + shown on gauge and >71C measured inside of the machine). Records are being kept.
