- Facility maintained in excellent condition
- Proper glove use and hand washing observed during inspection
- Hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm in spray bottles and in a bucket for storing wiping cloths. Staff stated solution in bucket is changed every 2 hours.
- Prep coolers and walk-in cooler measured to be below 4C
- Upright freezer measured to be -26C
- Hot held demi-glace and bacon were measured to be above 60C
- High temperature dishwasher reached 79C at dish surface during sanitizing rinse cycle
- Food storage practices good - all food and food related items stored off the ground and covered
- Hole under hand sink at back of kitchen has been sealed
- Accurate thermometers available
- Temperature monitoring logs in use
- General sanitation excellent. All equipment maintained in sanitary conditions.
- No signs of pest activity noted
- Foodsafe certified staff on-site
