Observation: Minor repairs and maintenance needed in the deep fryer kitchen area:
1. Metal handles on the deli coolers have broken off or are in poor repair.
2. Baseboard for wall partition located in front of glass washer is missing.
Repair required to prevent grease build up and potential food contamination.
Corrective Action(s): Repair and replace these broken items as needed. Correction required in a month.

Observation: General cleaning needed in dish washing pit area under machinery and behind counters. Old grease and food debris observed.
Corrective Action(s): Wash and clean hard to reach areas as part of the cleaning schedule. Correction required in one week.

Observation (CORRECTED DURING INSPECTION): Main dish washer was running low on chlorine sanitizer pellets. Sanitizer was falling below 50 ppm at the time of inspection. Ensure to refill machine as required to ensure adequate sanitizer level at 50 ppm to 100 ppm.
Corrective Action(s): Machine was refilled by staff. 100 ppm chlorine solution detected.

Comments

Overall, premise in general is sanitary.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Food is from an approved source.
Coolers are at 4C and below. Freezers are at -18C and below.
Hot holding units are at 60C and above soups and gravy.
Prepared food are labelled and time/date stamped. Food stored in food grade containers and covers.
Fresh condiments are suspended in ice to be used up in less than 2 hours, ie creamers and sliced lemons - good.
Food dispensing units are sanitary.
Ice machines are sanitary with dedicated hand scoop. Only one in use at the time of inspection.
Temperature holding is adequate and in use with accurate thermometers and logs.
Take out containers and utensils are sanitary.
Quat sanitizer in use at 200 ppm in spray bottles.

Dishwasher final rinse at 100 ppm chlorine at the plate after sanitizer refill.
Glass washer final rinse at 100 ppm chorine at the plate.

Pest control monitoring and prevention program in place. No signs of pests at the time of inspection.
Valid Permit posted at front greeting area.

Recommendations:
There are unlabelled white detergent cleaning bottles near the deep fryer station. Ensure to label these to prevent confusion between a cleaner and a sanitizer.

Overall, facility well maintained.
