Observation (CORRECTED DURING INSPECTION): Bagged bread was stored directly on top of packaged raw meat in the walk-in cooler unit.
Corrective Action(s): Bread moved during inspection. Even when packaged, ensure ready-to-eat items are not stored in direct contact with raw meat, as this may increase the risk of contamination.

Comments

*General sanitation excellent throughout main kitchen and servery areas. No pest issues observed during inspection.

Main kitchen:
*Walk-in cooler and freezer temperatures satisfactory.
*Upright glass-door cooler at 4 C or colder (note: new unit installed, similar in capacity to unit it replaced).
*No hot holding occurring during inspection.
*Cooling procedures adequate at time of inspection. Generally, only small volumes of leftovers are available after food service.
*Discussed cooking temperature checks with staff - probe thermometer is available and in use.
*Quat sanitizer available at 200ppm in cloth bucket.
*High-temperature dishwasher reached a sanitizing rinse temperature of 78-80 C at the plate level during final rinse.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Dry goods storage areas maintained in tidy condition. Scoops stored outside of bulk food bins.
*Random selection of nutritional supplements were within expiry dates marked on labels.
*Mixer attachments, knives, spatulas, ladles and other utensils stored in clean condition. No cracked or damaged utensils observed during inspection.
*Staff hand washing practices satisfactory at time of inspection.

Servery kitchens:
*All servery areas checked. Hand sinks and refrigerator temperatures satisfactory.
*No food service occurring during inspection.
*Ice machine in main floor servery maintained in clean condition. Scoop stored appropriately. Note: significant water pooling observed behind machine - maintenance staff called during inspection. Ensure issue is corrected by tomorrow.
*Water pitchers are washed in the main kitchen dishwasher.
