-All hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
-Meat processing room at 9.1C
-All coolers (walk-in and displays) < or = to 4C
-All freezer (walk-in and displays) < or = to -18C
-Thermometers are present on coolers and freezers
***Thermometer on the outside of the walk-in freezer was not functioning. Operator had indicated that a replacement has already been ordered.
-Three compartment sink in use for manual dishwashing. 200 ppm Quat sanitizer available in dispenser.
-200 ppm Quat sanitizer available in spray bottles throughout work area
-Band saw is cleaned twice per day
-Meat tenderizer is cleaned before and after each use
-Wrapping machine is cleaned twice per day
-All meat processing equipment are cleaned between processing different types of meat
-Floors are cleaned with bleach solution
-Temperature logs in use
-Cleaning logs in use
-Chemicals stored separately from areas of food prep and storage
-Hair nets and gloves in use
-No signs of pests observed during inspection. Ecolab provides pest control service.
