Observation (CORRECTED DURING INSPECTION): Chemical glasswasher could not provide an iodine residual to sanitize glassware. 12.5 ppm iodine is required. All glassware will be washed in the kitchen dishwasher until glasswasher is repaired.

Observation: The chemical glasswasher had a concentration of 0 ppm iodine at the glass surface upon final rinse cycle. A minimum of 12.5 ppm iodine is required to achieve sanitization. [Date to be corrected by: January 9, 2019]
Corrective Action(s): Repair the dishwasher. Record the concentration at the glasswasher daily to ensure that it is working appropriately.

General Comments
All handsinks equipped with hot and cold running water, liquid soap and paper towel
Bleach sanitizer available in spray bottled at 100 ppm; wiping cloths laundered at the end of each day
Low temperature dishwasher had 100 ppm chlorine at the plate level upon final rinse cycle
All coolers operating at </= 4C; all freezers operating at </= -18C
No hot-holding at time of inspection
UV fly light in operation; pest control contract in-effect - no signs of pests observed
Ice machine free of mould and rust; ice scoop stored in separate container
Ventilation hood free of dust and grease
General sanitation is satisfactory

Reminder: Please begin recording the following on a daily basis 1. Sanitizer concentration at the chemical glasswasher 2. Sanitizer concentration at the kitchen dishwasher 3. Temperatures of all coolers/freezers 4. Concentration of bleach in the sanitizer spray bottles.
