- Facility in EXCELLENT sanitary condition
- No evidence of pests
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (74.5) Degrees Celsius ppm at the dish
-- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Three functional sink plugs available for use observed
- Receipts available for inspection (inspected by EHO during inspection. Lack of Hirame on invoices)
- Sushi rice at pH 4.5 or less

- AJI and HIRAME (in all RAW forms) have been removed from menu. CORRECTION ORDER IN EFFECT for these items.
- Crab shells and oyster shells found at facility for serving of food items to customers. Crab shells were still hot from cooking step. These items are single use only and can not be run through dishwasher. Discussed and understood by owner. NO EVIDENCE of re-using these items at facility today.
