Observation (CORRECTED DURING INSPECTION): As per staff on duty, chicken is sliced and cooked on the grill before being placed in the warmer, but the same is not done for the beef/lamb.
Corrective Action(s): All meats must undergo a secondary cook step after being sliced but before being placed in the warmer.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Pan/tray used to marinate chicken doesn't get washed right away. It sits in the walk-in cooler until the evening. This is a recurring issue.
Corrective Action(s): Once the cones have been prepared, the pan/tray along with any utensils must be washed and sanitized immediately.

Observation: The paper towel dispenser at the front hand sink was empty.

Observation: Staff on duty did not know where the temperature logs were kept. The days that she works, she doesn't log temperatures.
Corrective Action(s): All staff should be aware of the temperature log. Cooler and hotholding temperatures must be recorded DAILY.
