Observation (CORRECTED DURING INSPECTION): Hand washing station located in back near prep sink not supplied with liquid soap. Operator placed liquid soap at the sink during time of inspection.
Corrective Action(s): Purchase a new dispenser or repair the current wall-mounted dispenser to ensure the handwashing station is supplied with liquid soap at all times to promote adequate hand hygiene practices.

Observation (CORRECTED DURING INSPECTION): One bag of ham (in 3-compartment sink) and two bags of cheese (on counter) observed thawing at room temperature. Operator mentioned they were removed from the walk-in cooler <1 hour ago and both measured at 10'C surface temperature. The operator placed the foods back into the walk-in cooler during time of inspection.
Corrective Action(s): Ensure all foods are thawed using one of the following techniques to prevent bacterial growth and or toxin production due to time-temperature abuse:
- Under cold running water
- In the walk-in cooler (at 4'C or lower)
- Completely submerged with its original packaging in cold potable water (water should be changed every 30 minutes)

Routine Inspection Conducted

1. Temperatures:
- Walk-in cooler at 3'C
- Sandwich/prep cooler at 4'C (top and bottom)
- Thermometers available in cold-holding units

2. Sanitation:
- General sanitation of premises satisfactory
- Hand washing station in prep area and in staff washroom supplied with liquid soap, paper towel, hot and cold running water
- QUATS sanitizer spray bottle measured at 200 ppm QUATS concentration with test strip
- 3-compartment sink available for manual warewashing (QUATS dispenser measured at 200 ppm QUATS concentration with test strip)

3. Storage:
- Dry storage area kept in clean manner
- All foods observed covered and stored at least 6 inches off the floor

4. Pests:
- No signs of pests during time of inspection

5. Administration:
- FOODSAFE Level 1 trained staff available on premises
- Operating permit visible during inspection
