Observation (CORRECTED DURING INSPECTION): All potentially hazardous food products inside of the domestic cooler and freezer were at approximately room temperature at time of inspection. The cooler / freezer unit was inadvertantly turned off. These products included the following:
- 4L container of pickles and condiments
- Box of pizza pops discarded
- Onion rings and chicken strips (approximately 2 lbs)
- Sausage weiners on bottom comapartment
- Cut romaine lettuce and tomatoes
- Two containers of margarine
- 6 hard-boiled eggs
Corrective Action(s): Aforementioned items were discarded at time of inspection. Power was restored to the cooler and freezer unit at time of inspection. Ensure that the cooler and freezer units operate at 4C and -18C or less, respectively.

Observation: Undercounter cabinets underneath the Bunn coffee machine as well as where the hot chocolate is stored contained a moderate amount of rodent droppings.
Corrective Action(s): Remove the rodent droppings with 1 part bleach, 9 part water solution and saturate/soak for approximately 15 minutes before wiping up. Contact a professional pest control company on monitoring measures for rodents and ensure that there is a tight seal under the twin concession windows when closed to prevent rodent entry.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Domestic cooler at 20C*
- Domestic freezer at 18C*
- Stand-up freezer unit at -20C
- Chest freezers in storage room at -18C (left) and -23C (right)
- Beverage cooler at 4C (cooler contains creamers and milk products)
- Coolers and freezers equipped with accurate thermometers

2. Hygiene and Sanitizing
- Hand wash sink (two-compartment sink) stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer spray bottle measures at 200 ppm
- Drain plugs present in two-compartment sink. The proper method of preparing a sanitizing solution in the second compartment of the sink was discussed with the operator (3 capfuls into a sink approximately 75% full of water)
- Utensils, knives, ladles, spatulas in good sanitary condition
- Cappuccino machine in sanitary condition

3. Storage
- All food products stored at least 6" off the floor
- Candy and single-use disposable cups are stored inside plastic containers with tight-fitted lids - excellent

4. Pest Activity
- Please consult your professional pest control company on monitoring for rodent activity. Recommendation: Use a plastic seal mounted on the bottom of the concession doors to create a tighter seal to prevent rodents and pests from entering

5. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1 renewed (please send by email or FAX certificate to Environmental Health Officer)

NOTE: Masking tape has been placed over the power bar switch to prevent it from accidentally being shut off.
