Observation (CORRECTED DURING INSPECTION): Dishwasher had no detectable chlorine residual in the final rinse cycle. Chlorine sanitizer jug observed empty. Operator replaced sanitizer and primed the dishwasher. Chlorine residual measured at 50ppm.
Corrective Action(s): Ensure dishwasher dispenses minimum 50ppm chorine during operations to adequately sanitize dishware, utensils, and equipment.

Observation (CORRECTED DURING INSPECTION): Back of house handsink had no hot/cold running water, liquid soap, or paper towel available. Operator turned on plumbing, located soap, and paper towel during the inspection.
Corrective Action(s): Do not turn off water for the back of house handsink. All handsinks must be equipped with hot/cold running water, liquid soap, and paper towel for handwashing.

1. Ensure rice scoop stored in ice water is changed out every 2 hours.
2. Ensure temperature checks are being documented. Temperature logs provided during inspection.
2. Discussed with operator on sunken and cracked floor tile at kitchen entry. Broken tile can also be a tripping hazard. Begin planning for replacement to ensure floor is smooth, non-absorbent, and easily cleanable.
