302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) High temperature dishwasher was unable to provide a minimum of 71C on the on the dish surface on the final rinse.
2) Potato press was found to have potato debris from the previous night's use.
Corrective Action(s): 1) Service dishwasher and ensure it can provide a final rinse temperature of 71C on the dish surface on consecutive cycles to properly sanitize equipment and utensils. While dishwasher is being serviced, manually warewash using the 3-compartment sink. Operator prepared 100 to 200ppm bleach at the time of inspection.
2) Ensure equipment is properly cleaned and sanitized after each use to prevent potential cross contamination of foods and to prevent potential attraction of pests. Potato press was washed and sanitized at the time of inspection.

Observation: Tomato sauce was stored in an opened can.
Corrective Action(s): Once canned foods are opened, the contents must be transferred to a food grade container to prevent potential contamination of foods.

Observation: Rodent droppings were found in the kitchen and front cashier area.
Corrective Action(s): Clean and sanitize all areas affected by rodent droppings. Monitor for continued pest activity and contact pest control services as needed.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) Light covers are missing from the light fixtures in the kitchen.
2) Cardboard was used to line a shelving unit across from the dishwasher.
3) Cardboard was used for shaping samosas
Corrective Action(s): 1) Either install shatter resistant covers over the light fixtures or obtain shatter resistant light bulbs to prevent potential glass breakage.
2) Discontinue the use of cardboard to line surfaces. All surfaces must be smooth, non-absorbent, and easily cleanable.
3) Discontinue the practice of using cardboard to contact foods. Cardboard cannot be washed and sanitized after each use. Cardboard was discarded at the time of inspection.

Corrective Action(s): Service dishwasher and ensure it can provide a final rinse temperature of 71C on the dish surface on consecutive cycles to properly sanitize equipment and utensils. Contact a service technician to adjust or service the dishwasher.

Observation: Sanitizer pail and spray bottle were unlabelled.
Corrective Action(s): Ensure all containers are properly labelled to identify their contents to prevent accidental mixing and/or misuse of chemicals. Containers will need to be relabelled as needed.

Observation (CORRECTED DURING INSPECTION): Numerous single use plastic zipper seal bags were found on the dishwasher drying rack and used plastic wrap was found along the shelving areas,.
Corrective Action(s): Plastic zipper seal bags and plastic wrap are intended for single use and cannot be properly washed and sanitized for reuse. Zipper seal bags and plastic wrap were discarded at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 2C (top and bottom).
-Front sweets cooler was at 3C.
-Back chest freezers (4 units) ranged from -15C to -20C.
-Back upright freezer was at -18C.
-Chest freezer in the front area was at -18C.
-Storage area novelty freezer was at -28C.
-Sauces cooked to greater than 74C.
-Small amounts of butter sauce were found cooling in inserts at the time of inspection. Sauces were made the previous night and were at 4C/5C. Ice wand available on-site when large amounts of potentially hazardous foods are prepared.
-Sink plugs available for the 3-compartment sink for manual warewashing.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle tested at 200ppm.
-Sweets on the front display cooler properly protected from potential customer contamination - covered with plastic wrap.
-General sanitation satisfactory at the time of inspection. Additional cleaning required in the prep cooler.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
*Remove food dyes which state "Do not fit for human consumption" - these are not food grade dyes.
-FOODSAFE Level 1 valid until August 19, 2023. Ensure FOODSAFE Level 1 is renewed prior to expiry.
