Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods stored in the prep cooler above 4 C (@16 C). Operator voluntarily discarded all affected PHFs. Cooler has been reset and is now operating at safe food storage temperatures.

-Sanitizer available, but was too strong.

-Dishwasher (high-temp) reached 72.1 C
-General sanitation is very good
-No pest activity noted during inspection
*Reminded operator that all food contact surfaces that need manual sanitization needs to be done with chlorine at 200ppm.
