-Recommend that all food in the dry storage room is kept in sealed, pest proof containers. All coolers were < 4 C. Freezers were < -18 C. Hot held foods were > 60 C. No evidence of pests. The bleach sanitizer solutions were tested at 100 ppm The dishwasher reached 75 C at the plate level. The ice machine was clean. Reviewed cooling practices with staff for the pho broth. General sanitation was satisfactory.
