Comments

Hot holding unit opposite of walk in cooler had temperature range of 145 F to 165 F
Single pans were used which allowed for better heat transfer.
Double pans were previously used which may have impeded heat transfer
Monitor and record hot holding unit temperature every few hours and please forward temperature results to us via email.
