304 - Premises not free of pests [s. 26(a)]
Observation: Observed drain flies around the dishwasher, in the floor drain by the dishwasher, and a few in the mildshake making area (front service kitchen).
Corrective Action(s): Immediately call a professional pest company to eliminate the flies. Recommend having floor drains treated for flies.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: The dishwasher is leaking and water is pooling on the floor around and beneath the dishwasher. Food debris and pooling water is creating an environment where flies are breeding.
Corrective Action(s): Immediately mop up the pooling water around and under the dishwasher. Clean up the food debris around the dishwasher throughout the day. Contact your pest company to eliminate the flies.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The dishwasher is broken as water is leaking out and staff must manually drain the dishwasher. Water is pooling around and under the dishwasher, which is creating conditions that promote the harboring of pests. This is also unsafe, as staff could get burned from the hot water when they drain the dishwasher.

2) The Ecolab Quats sanitizer dispenser, in the back kitchen, must be continuously pumped until sanitizer exits it. The dispenser is NOT working as per manufacturer's specifications and staff may not use it.

3) Found many plastic food containers & lids, and metal cookware (strainer) that are damaged (cracked, chipped, melted). Pieces of plastic or metal could fall into food, and/or bacteria will grow in the cracks.
Corrective Action(s):
1) Immediately repair or replace the dishwasher so water no longer leaks out when in operation. Have the dishwasher maintenanced to ensure the automatic soap dispensing motor is working properly too.
A follow-up inspection will be completed to ensure the dishwasher is fixed. Failure to fix the dishwasher may result in the issuance of order, tickets, and/or fines.

3) Discard all damaged food containers, lids, utensils, and cookware. Purchase new ones and train staff to inspect these items daily for damage.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Found wall tiles have fallen off the wall, behind the flat grill in the front cook station. Wall is no longer sealed and cleanable, as the exposed wall is unsealed and rough.
Corrective Action(s): Install tiles on the wall, so the wall is durable, smooth, level, sealed and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -17C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- High temp dishwasher was 71.9C during the rinse cycle, at the plate's surface as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Disposable gloves properly used. Staff wash hands PRIOR to putting a pair on, and discard them when they complete/change a task.
- Quats sanitizer in cloth buckets was 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and all foods stored 6" off the floor on racks, and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level is good.

REMINDER
All wiping cloths shall be stored in a bucket of sanitizer. The cloths must be fully covered/submerged with sanitizer.
Schedule the exhaust canopy to be professionally cleaned and serviced the month, as per the service sticker (May 30, 2023).
A follow-up inspection will be completed on/after June 5/23 to ensure violations have been.
