Observation: Ceiling tile in dry storage area hallway (right past the entrance) observed to have heavy water damage. Tile is bowed, stained, and potentially mouldy.
Corrective Action(s): Replace ceiling tile.

Observation: Cutting boards observed to be heavily scored and discoloured. Boards with cuts too deep cannot be easily cleaned and sanitized. This will lead to potential contamination of meat that is cut on it.
Corrective Action(s): Repair (e.g. resurface) or replace cutting boards that are heavily scored/damaged.

Sanitation:
Handwash station equipped with hot/cold running water, liquid soap and paper towels
Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
Bleach sanitizer spray bottle labelled and tested at 200ppm.
Meat saw and grinder sanitized every 4 hours and disassembled for cleaning and sanitizing at the end of the night.

Storage:
General food storage practices good at the time of inspection.
Raw meats stored away and below ready-to-eat foods.

General:
No pest activity observed at time of inspection. Continue to monitor pest activity and implement control measures as needed.
