Corrective Action(s): Reheat the vegetable to 74C then hot hold at 60C or above. Do not hot hold any food in between 4C to 60C.

Observation (CORRECTED DURING INSPECTION): Metal trays of raw meats were stored on top of fresh vegetables in the stand-up cooler. Meat juices not observed to be leaking.
Corrective Action(s): Move the raw meats to the lowest shelf in the cooler. Raw meats must not be stored on top of or directly beside ready to fresh and ready to eat foods.

Observation: Rodent droppings and silverfish noted around the facility. Operator stated professional pest control visited every week.

- 3 compartment sink set up for manual dishwashing..
