209 - Food not protected from contamination [s. 12(a)]
Observation: Observed a significant build-up of biofilm in the water reservoir of the ice machine
Corrective Action(s): Ice machine voluntarily turned off during inspection. Give ice machine a deep clean and sanitize by tomorrow (May 5th, 2022). Add these areas to a regular cleaning schedule.

304 - Premises not free of pests [s. 26(a)]
Observation: Significant and well established mouse infestation observed in side of premise. Contract with pest control already in place and company coming in twice per month for servicing.
Corrective Action(s): 1) Have pest control company perform an entry point inspection for the building and follow all recommendations they provide in their subsequent report. Due; May 18th, 2022
2) Conduct a thorough deep cleaning of premise removing all mouse droppings including (but not limited to) the following areas: behind line coolers in kitchen, bar area, walk in cooler along wall with raw meat, staff room + adjacent storage closet in staff room, prep/dishwashing area, dry storage room, etc). Recommend use of glue boards (without live trap) and snap traps (where they do not pose a safety risk to staff); consult with pest control company as needed to supplement their plan. Due: May 13th, 2022

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1) Observed a build-up of loose items (bottle caps, old lottery tickets, broken glass, etc) behind many of the pieces of equipment in the front bar area. These areas and build-up of materials can provide nesting areas/materials for pests.
2) Numerous gaps around piping in lower cabinets in bar area and mouse droppings noted in some of the cabinets. Plug up these holes with a rodent proof material (ex wire mesh, steel wool or spray foam with rodent deterrent) Consult with pest control company as needed.
3) Ground level risers on floor in walk-in cooler (along wall with raw meat storage) are hollow and with mouse activity noted in the walk in cooler in this area, this can provide a place for them to hide.
Corrective Action(s): 1) Give front bar area a deep clean, pulling out all the equipment possible and cleaning under behind them and cleaning out all cabinets. due: May 13th, 2022
2) Seal up gaps in bar area where mice can use for harborage, around the plumbing etc in lower cabinets in particular. Due: May 18th, 2022
3) Replace wooden risers in walk in cooler with something that can get product at least 6" up off ground and is open for cleaning/monitoring. Due: May 18, 2022

Observation: Upstairs storage room and entry room to upstairs storage area has many items on the floor and mouse droppings noted throughout area. Some items in this area were identified as no longer in use/needed for operation.
Corrective Action(s): Go though all items in this area, removing items that are no longer needed for operation. Also move all items on the floor, cleaning up any droppings and (where possible) store up off the ground 6" or more to reduce harbourage areas for mice. Due: May 18th, 2022
