Observation: Rats droppings found in hard to reach areas (behind the dishwasher and drain boards, corner three-compartment sink, in the utility box, in a pipe cover box under the hand sink (prep. area near the wall); Noted one dead rodent on a smash trap behind the utility box/near cooking line (ants present - the same location).

Corrective Action(s): Pest control service must be notified about the issues (an invoice for service has to be available).
Clean and sanitize hard to reach areas.

Note: The kitchen is not in service at the time of inspection.
Hot holding units were not in use. Ensure that all hot holding units > or = 60 C.
Note: Begin temperature log for all coolers and freezers.
High temperature dishwasher (stationary) not in use at the time of inspection.

General sanitation is satisfactory; however found rat droppings in hard to reach areas (see violation sections).
Handwashing stations supplied with cold/hot running water, soap, and paper towels.
Coolers - satisfactory.
Freezers (walk in, counter-top) - satisfactory.
Food items are stored in plastic/metal containers with lids.
Thermometers for cold units - available.
Three compartment sink available for manual dishwashing.
Quat sanitizer - available.
Note: Surface sanitizer must be available in spray bottles at 200 ppm Quat solution at each prep. station at the time of operation.
Dry storage area is satisfactory (food of the floor & covered).

Recommendation:
Noted a smash trap on the top of cooking line. (Safety Issue. Ensure that the pest service is done safely.)
