Observation (CORRECTED DURING INSPECTION): Sandwich prep island handwash station paper towel dispenser was not dispensing paper towels. Paper towel dispenser was locked.
Corrective Action(s): Ensure handwash station are easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels at all times to facilitate proper handwashing. Paper towel dispenser was unlocked at the time of inspection and allowed access to single use paper towels for drying hands.

Observation (CORRECTED DURING INSPECTION): Sandwich prep island area knives were stored in a Quats sanitizing solution.
Corrective Action(s): Discontinue this practices - sanitizer may transfer over to food. Facility will begin using a water bath, which will be changed every 2 hours.

Observation: Sandwich prep island sandwich cooler had significant food debris build-up. Cleaning is generally carried out on Monday but was missed.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times. Facility is to adhere to approved sanitation plan.

Comments

Main Deli Area:
-Walk-in cooler was at 3C.
-Display coolers were at 4C.
-Burger prep station was at 3C. Door seals have been ordered and will be replaced.
-Prep cooler across from grill was at 5C to 6C. Inspection carried out at end of lunch time. Monitor cooler - if cooler is unable to maintain 4C or less, cooler unit needs to be serviced or adjusted.
-Condiments stored on ice were at 4C. Ensure ice and water solution is changed once all the ice melts.
-Cheese cooler was at 4C.
-Hot holding of soup and poultry greater than 60C
-Temperatures checked and recorded daily.
-Hot potentially hazardous foods cooled in single layers on metal trays - do not cover hot foods entirely, otherwise it prevents steam from escaping.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails tested at 200ppm. Pails are changed every 2 hours and records are maintained.
-Deli slicer cleaned and sanitized every 4 hours - records are maintained.
-Utensils at grill station stored in hot water. Water changed every 2 hours.
-General sanitation of main deli area good at the time of inspection.
-No signs of pests noted at the time of inspection.

Sandwich Prep Island:
-Sandwich cooler was at 4C.
-Sandwich prep cooler was at 4C.
-Customer area coolers were at 4C.
-Hot holding was greater than 60C.
-3-compartment sink used for cleaning and sanitizing was at 200ppm.
-Quats sanitizer spray bottle was at 200ppm.
-No signs of pests noted at the time of inspection.

*Hand delivered health permit to reflect change of ownership to subsidiary corporation. Ensure health permit with valid decal is posted in a conspicuous location.
