Observation (CORRECTED DURING INSPECTION): 1. High temperature washer: 4 cycles tested:

At plate measurements show:
First cycle: 65 deg C
Second cycle: 64 deg C
Third cycle: 65 deg C
Fourth cycle: 67 deg C

All cycles showed < 82 deg C as per thermostat

NOTE: operator indicates the temperature of the washer was turned down because chopsticks were being warped because of the heat

Minimum requirement is at or above 82 deg C as per your thermostat

2. Bleach sanitizer bucket is 0ppm bleach residual and the sanitizer is mixed with soap -wiping towels are left on counters between uses. No test strips are available for monitoring

Corrective Action(s): 1. Repair washer

Once repaired all dishware/utensils are to be rewashed

NOTE: operator was able to repair washer at time of inspection -re-test shows at plate temperature of 75.9 deg C

2. Re-make sanitizer, maintain >100ppm as per test strips. Maintain wiping towels in sanitizer buckets between uses. Wiping towels left on counters are a breeding ground for bacteria

2. All lighting requires proper shielding in case of accidental breakage
