Observation (CORRECTED DURING INSPECTION): Staff observed attempting manually wash dishware without sinks correctly set-up for washing, rinsing and sanitizing.

Same staff moving clean dishware from dishwasher to soiled dishware drain board.

Staff handling soiled dishware then proceeding to handle sanitized dishware from dishwasher without hand washing.
Corrective Action(s): All food equipment, food utensils and food contact surfaces must be cleaned of all debris, then sanitized after use.

All food equipment and utensils where possible are to be cleaned and sanitized after use, using the dishwasher equipment.

Staff are to wash their hands prior to handling clean, sanitized dishware.

Observation: Mouse droppings observed in the following locations:
- upper floor dry storage area on floor along walls, under shelving units
- front service area - right of donut display case on floor around fire extinguisher

Food debris along kitchen counter conveyor belt and shelving below.

Front service area - both beverage dispenser drip trays are leaking below counter, with build-up of moisture and pop residue on waste plumbing pipes.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
