Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1) Low temperature chemical dishwasher sanitizing cycle measured at 0 ppm. Dishwasher sanitizer bottle was empty, no refill of sanitizer available on site.
2) No food contact surface sanitizer available. Unapproved domestic disinfectant spray being used.
Correction:
1) Discontinue use of dishwasher until new dishwasher sanitizer solution is obtained. In the meantime, use 3 compartment sink for manual dishwashing and rewash all utensils/equipments/tools before use.
The following steps must be done for manual dishwasing:
1. Wash with soap
2. Rinse
3. Sanitize
4. Air Dry

2) Obtain a food contact surface sanitizer and have it readily available for employees to use.

Operator purchased chlorine bleach during inspection. Operator was instructed on how to create a chlorine bleach sanitizing solution, 1 teaspoon bleach for 1 L of water. Spray bottle was properly labelled as "Sanitizer"

Follow up inspection to SCHO-BYGQZZ:
- Chemical dishwasher at 50 ppm chlorine, dishwasher can now be used for dish washing
NOTE: Ensure sanitizer solution for the dishwasher is available on site at all times to ensure adequate sanitization of utensils/equipment/tools.
