Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse chlorine sanitizer residual was less than 50 ppm at the plate initially. It was mentioned that a technician had provided a service last week regarding the dishwasher.
Corrective Action(s): Staff re-connected the lines to the a new sanitizer bottle, primed the dishwasher, and a minimal 50 ppm chlorine residual was measured from the plate after the dishwasher final rinse cycle. Chlorine test strips were available on-site.

Ensure the chlorine sanitizer concentration after the dishwasher final rinse is checked each day (especially during the first load). Recommended: Record the dishwasher final rinse chlorine sanitizer concentration on a log.

Observation: A baseboard was not in place between the floor to wall junction behind the prep. table in the back area and it had fallen onto the floor. This was shown to the Manager.
Corrective Action(s): Reseal the baseboard where missing behind the prep. table; Correct within 3 months.

Prep. sink was operational.
200 ppm QUATS sanitizer was available in the bucket and spray bottle.

Hot-held food was at or above 60 degrees C.
No signs of recent pest activity were observed at the time of inspection.
