- sauces are now hot held at 60C or higher - owner aware that sauces must be reheated to at least 74C prior to being hot held at 60C - sauces in squeeze bottles now stored in cooler - wiping cloths now in sanitizer buckets - handwashing station clear of debris - rice scoop in ice water; owner has posted sign on informing employees to wash, rinse and sanitize rice scoops every 4 hours > alternative is to purchase 3 scoops and switch every four hours; all must be at the end of the day in dishwasher Report not signed due to COVID-19 protocols.
