Observation (CORRECTED DURING INSPECTION): Cooking of chicken on donair machine is not followed by secondary cook step. Staff member on site stated that meat cut/sliced from donair machine is cooled to room temperature and stored inside the cooler
Corrective Action(s): After the meat/chicken is cooked on donair machine and thinly cut, it must undergo secondary cook step in oven to reach temperature of 74C before it is cooled. Secondary cook step explained to staff in detail

Observation (CORRECTED DURING INSPECTION): The cooked donair chicken in a container was left outside and measured at 22C
