Observation (CORRECTED DURING INSPECTION): Vegetable slicer was observed to have old food debris crusted on the blades.
Corrective Action(s): Repeat violation. Ensure the slicer is taken apart and thoroughly cleaned and sanitized after each use.
Staff began cleaning slicer at time of inspection.

Observation: - Floors under fryer and sides of fryer require deep cleaning. Build-up of grease and food debris observed.
- Grease trap requires servicing.

- Ensure grease trap is serviced more frequently than scheduled if an odour is present.

- Hand sink was accessible and was properly supplied with liquid soap and paper towels.
- Bleach sanitizer solution was available at 200 ppm in sanitizer bucket.
- Three-compartment sink was maintained in sanitary condition
- All coolers were measured at 4C or colder. *Note: one undercounter cooler located across from oven is still not in use - OK.
- Freezer measured at -22C
- Discussed proper cooling procedures.
- Ventilation canopy was observed to be clean at time of inspection
- Food storage practices satisfactory. Reminder that all food items must be properly covered.
- General sanitation (other than around deep fryer) was satisfactory
- No signs of pest activity noted at time of inspection.
