Observation: 1. Inserts of chicken left on counter next to front handsink - waiting to be covered with plastic wrap.
2. Large open bag of rice stored under prep table
Corrective Action(s): Ensure all food is protected from contamination.
1. No food should be placed on the counter next to handsink due to the splashing from the handsink during use. Install a splash guard if food is required to be in this area at any time to protect it from contamination. Until then NO FOOD can be in this area.
2. Once a large bag or container of dry goods is open it must be emptied into a pest proof container with a lid. For example a food grade bucket with a lid and label, stored at least 6 inch off the ground. Do not leave open bags of dry goods or it can attract pests and difficult to clean.

Observation: Neither staff (2) has FOODSAFE training, their manager does but is not working today.
Corrective Action(s): Ensure at least 1 staff during each shift holds a valid FOODSAFE Lv. 1 certificate, it is recommended that all staff have FOODSAFE when so few staff are working at the same time. Staff person will talk to manager about the FOODSAFE training process.
