Observation (CORRECTED DURING INSPECTION): The main handwashing station was obstructed with large pans and made access difficult.
Corrective Action(s): Clear the handwashing station area. Ensure that the handwashing station is easily accessible, and free of large equipment and pans.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) A metal tray with cooked potatoes stored directly on the flood near the back exit door.
2) Multiple trays of cooked potatoes stored directly on wastebins.
3) Multiple food items stored uncovered inside the walk in cooler and in the main kitchen.
Corrective Action(s): Store all trays of food (ie cooked potatoes, sweets) covered with plastic wraps and store min 6inches (15cm) off the floor. All food items must be protected from contamination.

Observation: Build up of grease and food debris in the following areas:
- Floors throughout the kitchen, particularly in around the two compartment sink, the stove area, and dry storage area.
Corrective Action(s): Clean the areas noted above and implement a regular cleaning schedule.

Comments

- General sanitation needs improvement. See violation section.
- All coolers (walk in, upright, display) < or = to 4C.
- All freezers (chest) < or = to -18C.
- Daily temperature log is missing prep coolers and display coolers. You must begin a temperature log and include all coolers and freezers. Keep records for review by the health inspector.
- Manual dishwashing is done twice a day. Please ensure to follow the proper manual dishwashing procedure for oversized/large pots/pans.
1) wash (with hot water 45C and detergent)
2) rinse (with hot water 45C)
3) sanitize (fully submerge pots for 2 mins in 100ppm chlorine solution at 45C)
4) air dry
- Surface sanitizer available in spray bottles at 100ppm chlorine solution.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity.
- FOODSAFE certified staff on duty. Verified at the time of the inspection. Note: FOODSAFE certificates obtained prior to July 29, 2013 expires on July 29, 2018. Must take refresher course to receive recertification.
Note: All food items in the dry storage area (ie bags of potatoes) must be stored min 6inches (15cm) off the floor to prevent pest contamination, better air circulation, and easier cleaning.
