Observation: Stem/Probe thermometer not sanitized prior to insertion into hot dog. Lack of sanitizing wipes for use in this area.
Spray bottle available but not practical for use.
Tongs for hot dogs are to be washed, rinsed and sanitized every two hours. Ensure adequate supply of tongs to assist staff as during busy times this is not always feasible. Having additional tongs ensures staff are always able to use a clean and sanitized tongs (this also pertains to other equipment such as pizza cutters that are frequently used during busy periods that are longer than 2 hours)

Corrective Action(s): Obtain sanitizing wipes (similar wipes provided to Management to source) OR have bucket and rags of sanitizer for use (again not very practical for ease of use for staff).

Two dead rodents found in traps in beverage room.
One dead rodent found in Candy room.

Corrective Action(s): Discuss treatment of drain with Pest Technician.
.Discuss areas of high activity with Pest Technician.
Ensure Pest Technician is using all traps. If some traps are not being used have them removed/disposed of.

Observation: Hole found in baseboards of small storage room across from garbage room
Hole found in doorskirt
Snapped/unset traps with peanut butter found in beverage room. These snapped/unset traps now are providing food for rodents.
Floor mats washed only once per week. Large plume of fruit flies from each mats once disturbed.

Corrective Action(s): Seal all holes and replace door skirts once signs of wear occur.
If Pest technician is not routinely servicing snap traps have them taken away/disposed of. These items provide food for rodents and extra clutter on floor for staff.
Floor mats should be cleaned at a higher frequency than once per week to eliminate organic materials.

- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Six functional sink plugs available for use observed
- Light covers in place
- Cooler handles and seals in good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
- Staff Personal items kept separate from kitchen equipment - storage area specifically designated for water bottles

NOTE: Sanitizer testing strips not in good condition and not functional. Ensure one staff member, preferably the staff member washing dishes each night, is checking sanitizer. Confirm with data record sheet
