Observation: Sliding door cooler in storage area was found to be 6-8 degrees Celsius.
Corrective Action(s): Cooler should be able to maintain foods at 4 degrees Celsius or less. Thermometer inside cooler was also reading approximately 6-8 degrees Celsius and the thermostat was already set to the coldest temperature setting. Operator complied with request to move all meats and dairy products to other coolers at time of inspection. Sliding door cooler shall be serviced/repaired to ensure it is capable of maintaining foods at 4 degrees Celsius or less.

Comments

General observations:
Coolers (except as noted above) were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding unit was 60 degrees Celsius.
Coolers and freezers are equipped with thermometers.
Food storage practices are generally good.
Storage areas are generally organized.
Food handler hygiene appeared satisfactory.
All sinks equipped with hot and cold running water.
Hand sink is supplied with napkins for drying hands. Discussed with operator to provide a holder for the napkins or use paper towels held in a holder/dispenser.
General sanitation is satisfactory.
Low temperature dishwasher had residual chlorine concentration of at least 50ppm after the final rinse.
No signs of pests.


Comments:
Operator has installed hand sink as was noted in the previous inspection report, and in doing so have relocated the front counter forward into the dining area. Operator states a proposed floor plan indicating the location of the hand sink was submitted to the health department and approval was received prior to installation. Operator agreed to a meeting later today (after 3:30pm) to discuss arrangement of equipment to improve access to hand sink for all food handlers. At time of meeting, discussion will also include customer access to the washrooms. Currently the customers need to walk through part of the food preparation area to access the washrooms. Pictures taken at time of inspection.
