205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: A) Line prep coolers measured between 7 and 10 C. left prep cooler measured less than 4 C in one small area of cavity. The top and rest of bottom of cooler is not maintaining proper temperature. Lids to prep cooler observed open and is likely contributing to excessive temperatures.
B) Under counter cooler not working and at 23 C. Miso paste and Korean paste (undefined) kept in unit.
C) Bar cooler measured 13 C. Adjusted cooler. No change.
Corrective Action(s): A, B and C. All cooler units must be serviced immediately to ensure they can maintain 4 C. or less at ALL times. Bar cooler products must be moved to alternate cooler immediately. Foods in inserts discarded. Lids to line prep coolers must remain closed when not in use. Re-inspection required.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse (low temp) measured 0 ppm. Wash and final rinse water temperature 37 C. Chlorine feed primed by operator and chlorine residual measured 50 ppm.
Corrective Action(s): Water temperature must be adjusted to allow wash water to achieve manufacturer specifications and/or Foodsafe recommended temperature of 60C. Service immediately. This will be checked on next inspeciton.
Dishwasher must be checked with test strips regularly or at least daily to ensure chlorine is feeding system and measures at least 50 ppm. Use check list as per standard sanitation plan for verification purposes.

Observation: Ants and other indefined insects observed at storage area and behind shelves.
Corrective Action(s): Clean up and maintain good sanitation. If pests continue, contact pest control company for advice and assistance.

Observation: Many areas of kitchen observed excessively dirty. Accumulations of food debris noted at storage shelves, under dishwasher, on counters, on walls, under prep coolers, behind cook line and to a lesser extent in the walk-in cooler.
Corrective Action(s): Thourough clean up required EVERYWHERE. Review sanitation plan and implement checklist to ensure work is completed on schedule and that the schedule is adequate. This will be reviewed at follow up inspection date.

Observation: Storage shelves made of wood are not of suitable design for food premises. Not easily cleanable; not able to keep food 6" off floor. Plastice shelving contains too many nooks and pockets where food can accumulate. Not appropriate for food environment.
Corrective Action(s): Replace both sets of shelves with those that can be easily cleaned and are made of suitable design.

Comments

Many significant aspects of premises not maintained in accordance with the BC Food Premises regs. Premises has history of critical infractions. Follow up inspection will include a review of all cooling units, general sanitation and dishwashing operation. Failure to address noted items will result in further enforcement.
Fix water leak at dishwasher.
