Observation (CORRECTED DURING INSPECTION): Numerous (3) soiled wiping cloths were noted on the counters at the time of the inspection and were not in use. No chlorine residual noted on cloths. Observed staff replenishing sanitizer buckets upon arrival for inspection.
Corrective Action(s): Ensure wiping cloths are being used with sanitizer on food contact surfaces. Follow sanitation plan regarding use of cloths, sanitizer and food contact surfaces. According to Mgr, procedure is to use cloth once and transfer to dirty bucket.

Observation: Dirt and debris noted in hard to reach areas: Under self serve pop machine cabinets in customer seating area, under dishwasher, under shelving near ice machine and under order assembly table.
Corrective Action(s): Thoroughly clean the areas noted above to remove all dirt and debris. Ensure cleaning frequency is sufficent so as not to allow accumulation of debris to occur.

Comments

-General sanitation is satisfactory aside from hard to reach areas noted above.
-Handsinks supplied with liquid soap and paper towel
-All cooler in prep/service area were 4C or colder
-Walk-in cooler was 3C
-Walk-in freezer was -5C *Staff member was in the process of cleaning/organizing freezer with door open. Ensure temperature drops.
-Hot holding was >60C Chicken burger patty 67C
-Sanitizer buckets (once replenished) were 100ppm chlorine
-50-100ppm chlorine detected on dish surface after dishwasher rinse cycle. Test strips present for monitoring.
-No signs of pest activity noted at the time of the inspection. Pest Control Contract in place with monthly visits. Service reports shown at the time of the inspection.
