304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings noted:
1. Behind hot water tank in corner of pita processing room (beside large pita oven). Holes in lower wall noted
2. Dry storage upstairs - on pallets, corner (by vinegar boxes), around flour catch tray under extra large flour bag hanging from ceiling

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1.Back bay doors left 6 inch open during inspection.
2. Side access panel not properly installed - exposing large gap in wall of building.
Corrective Action(s): Ensure bay door remains closed at all times when not shipping or receiving to prevent easy pest entry into facility. On-going issue. If door is required open to allow for cooling for staff then screen doors must be installed. Until then the door must remain closed.

Side access panel is used to access water valve to outside building. After accessed for the season the panel must be re-installed properly to prevent easy access to side walls of facility.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Note structural damage
1. 1 full tile missing in front of cooking equipment, partial break of 2 smaller tiles. Water pooling in gaps where tiles are missing.
2. Lower walls around lower floor walk in freezer - holes noted
3. Holes noted around lower hot water tank - partially filled/blocked
4. Wall scrapped and damaged - cooling pita rack storage location
Corrective Action(s): Ensure all surfaces are maintained in good repair, smooth, durable, easy to clean and prevent pest entry.
1. Replace missing and damaged tiles
2./3.Repair holes in walls - all lower walls should be reinforced by a stronger more durable material which is able to prevent pest entry and protect wall from being damaged my impact from racks, pallets etc.
4. All walls that experience continuous wear and tear must be protected or repaired regularly. Recommend rails or strip of protective material to protect wall from direct impact or wearing.
