Follow-up inspection Left side 2 door cooler (labelled #1) ambient air temperature at 4 C. Gaskets will be replaced in 2 weeks. Right side 2 door cooler ambient air temperature at 4 C. Undercounter prep cooler: top part is 4 C and bottom part is 6.5 C. **Do not use bottom part for the storage of potentially hazardous foods until an ambient air temperature of 4 C or below can be maintained.** Check temperatures of coolers daily and keep records. Dishwasher registered at >71 C after 3 runs. Ensure temperature is verified and dishwasher is achieving the minimum temperature required (71 C) prior to using it for dishwashing. Failure to comply may lead to further enforcement action. Paper towel dispenser at hand sink is working - good.
