Observation (CORRECTED DURING INSPECTION): 2 pieces rotisserie chicken stored inside the enclosed warmer measured with an internal food product temperature of 48C.
Corrective Action(s): Staff discarded the grilled chicken. Educated the staff to process rotisserie chicken in a timely manner so the food product temperature does not drop below 60C before storing inside the hot holding unit.
