Comments

- General sanitation is satisfactory.
- Main handwashing station in the kitchen supplied with hot/cold running water, soap, and paper towels. Ensure that the flow of water is adequate and continuous.
- High temperature dishwasher reached 72.5C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles at 100ppm chlorine concentration. Must label all sanitizer spray bottles.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 15cm off the floor to facilitate cleaning.
- No signs of pest activity.

Temperature Control:
- All coolers in the main kitchen and dry storage area maintained at < or = 4C.
- All freezers in the main kitchen and dry storage area maintained at < or = -18C.
- Ensure to keep up to date on temperature logs.
- Hot steam tables for food dispensing must maintain > or = 60C.
- Thermometers available in all refrigeration units. Ensure they are easily visible by staff.

Note: All FOODSAFE certificates obtained prior to July 2013 are all expired. Must retake FOODSAFE course and successfully pass it.
