Soup (thick cream style) observed in walk in cooler in a large container cooling.
When cooling thick soups it is;
-placed into small containers and/or,
-Use a cooling wand/ice bath
Staff have checked the soup cooling to ensure it is cooled within the max 6 hours (60C- 20C within 2 hours, 20C-4C within 4 hours)

Sanitizers on site, quats over 200ppm as per manufactures requirement

Dishwasher over 71C at dish, 72.6 tested.
