Observation: Lemons and fruits from end of last year is infested with mould and mould spores. Mould has also affected ketchup and condiment bottles.
Corrective Action(s): Discard all fruits, lemons, and vegetables inside the bar prep cooler (including ketchup and condiment bottles). The entire cooler must be cleared, cleaned-in-place and sanitized with 100 ppm chlorine or quats prior to use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Countertop panini grill has not been cleaned after use. Significant amounts of oily residues are present inside the grill.
Corrective Action(s): Clean, rinse, sanitize the grill area. Ensure that the grill is cleaned routinely (e.g.. every 4 hours during operating period) to maintain it in sanitary condition.

Comments

Routine inspection of pub / lounge. The pub was not operational at time of inspection - kitchen space is leased to a catering company. Owner/operator present on premise. All food present in kitchen belongs to the leasee.

- Glasswasher dispensed 50 ppm chlorine at final rinse
- Low temperature dishwasher dispensed 50 ppm chlorine at final rinse
- Glassware, spoons present on bar tables need to be cleaned and sanitized prior to re-opening
- No evidence of pest activity at time of inspection

Temperatures: (Limits: Max of 4C for coolers; Max of -18C for freezers; Min of 60C for hot-holding units)
- Stand-up cooler at 4C
- Prep cooler (left drawer) at 3C
- Prep cooler (right drawer) at 3C
- Both stand-up freezers at -18C
- Refrigerated prep station at 3C

WARNING:
The kitchen area is not maintained in sanitary condition.

- The majority of utensils in tray under center prep table are not maintained in sanitary condition. Spoons, scoops are all saturated with grease marks. Ladles hanging next to the wall contain sticky residues that need to be cleaned
- Dishwasher grate contains significant amounts of food debris. Clear the food debris.
- Stand-up cooler (right side) contains debris at the bottom. Door seal is saturated with grease marks. Remove the debris, clean and sanitize, and wipe off residue from door seal.
- Sanitizing cloths are not cleaned after use. Grease-laden rags are present around the kitchen. Remove the rags and ensure that only clean rags are used for sanitizing food contact surfaces.
- Deep fryer area is not cleaned after use. Frying area is saturated with black-coloured grease. Container of grease in the corner of the kitchen must be emptied after use.
- Cooler handles and top of prep-cooler doors are greasy and need to be wiped off
- Knives along the wall next to dishpit are not maintained in sanitary condition
- Can opener contains significant amounts of food debris and need to be cleaned by the operator
- Dustpan present in dishwashing sink area. Please keep the dustpan on the floor at a designated janitorial area
- Multiple areas (under prep tables, under chemical storage area near the sink) the floor have significant debris that needs to be swept

Both the owner and the leasee have obligations to maintain the premise in sanitary condition. The above-noted deficiencies are to be corrected before the next inspection (Thursday, Feb 22). If deficiencies are not corrected, further enforcement options may be considered including the issuance of orders and violation tickets.
